Egg Bites

Whether you are looking for a new idea for breakfast or an easy snack that's high in protein these egg bites are worth the few minutes it takes to whip them up.

Ingredients:

1 TBSP coconut oil

6 Slices of Turkey or ham* (look for less salt or uncured options)

6 Eggs

½ cup shredded Cheddar cheese

Salt and Pepper to taste

Instructions:

Preheat oven to 375 F

Brush 6 cups of a muffin tin with coconut oil

push down one slice of meat into each of the oiled muffin cups

Crack on egg into each muffin cup, top with cheese and a dash of salt and pepper

Bake for 20 minutes or until fully set.

  • Feel free to add some vegetables or additional seasonings to these for fun or variety and make them your own.

*You can use a slice of bread instead of the meat here. Use a rolling pin to roll it extremely thin before pushing down into the tin and then cut the portion off that sticks up out of the tin to avoid burning while baking.

These can be stored in an airtight container in the fridge for 3-4 days and either eaten cold or popped in the microwave for 30-45 seconds to heat up before eating.

My kids like them for breakfast or even in their lunch box in place of a sandwich and I tend to grab them after my workout when I am looking for an easy burst of protein.
