Cucumber and Carrot Salad

I eat at least one salad a day, sometimes more. I love it. But, salad doesn't have to mean just a simple bed of greens mixed with assorted veggies topped with dressing.
Salads can be as unique and interesting as all of you.
Here is a delicious option to use as a new side dish or chop up an egg or some lean meat to add on top and you have a well balanced option for lunches.
Ingredients:
2 Medium Carrots, peeled
1 English Cucumber (or regular cucmber with seeds scooped out)
2 Green Onions, chopped
1 Lime
1 TBSP Sesame Seeds
Salt and Pepper
Instructions:
Squeeze the juice out of 1 lime, set aside (if you do not get about 2 TBSP of juice, add a splash of vinegar)
Using a spiralizer, peeler or mandolin cut or slice the carrots into long thin ribbons
Cut the cucumber lengthwoise to remove any seeds and then slice into long thing ribbons (or use a spiralizer)
Layer the carrot and cucumber ribbons on top of each other in a bowl, add chopped green onions and sesame seeds, drizzle with lime juice and sprinkle with a touch of salt and pepper.
Toss and enjoy!
