Simple Snacking: Yogurt Bark

This snack is so quick and easy to put together and it's a delicious and refreshing treat to grab during these hot and busy summer months.

All you need is some plain (non fat) greek yogurt to use as your canvas and you can create this anyway you like it.

  • 2 cups nonfat plain greek yogurt

  • 1/4 cup pure maple syrup (or agave if you prefer)

  • 1/2 teaspoon pure vanilla extract

  • raspberries, sliced

  • blueberries

  • toppings of choice:

  • unsweetened coconut flakes

  • chopped nuts

  • granola

  • Line a rimmed baking sheet with parchment paper

  • Mix the yogurt, sweetener and vanilla together

  • Spread the yogurt mixture evenly onto the prepared pan

  • Decorate the yogurt with fruit (you can use whatever fruits you like here)

  • Sprinkle the top with a topping of choice (I chose coconut flakes for this post but nuts or granola give the bark a delicious little crunch if you have them on hand)

  • Place the pan in the freezer for about 2 hours and then cut and enjoy!

What you don't eat right away can be stored in freezer bags safely for a few weeks

but good luck having it last that long!

This bark is so kid friendly, it's a fun treat for them to help put together and a very healthy snack to offer them when those summer munchies come calling.

Once you get the method down you can do this so many ways,

try differnt flavors in the yogurt, mix different fruits and toppings,

you can even add little chocolate pieces or sprinkle some cocoa powder in the yogurt before spreading if you are looking for a healthier alternative when chocolate cravings hit. Play with it and have fun, and if you make it at home
