Mozzarella Stuffed Meatballs

Meatballs are an easy dish that somehow always tastes like you slaved away for hours on them- this version adds an extra surprise burst of ooey gooey mozzarella in the middle. It really can’t be beat!
These came to be as a way to use up some cute yummy little mozzarella balls I picked up as an appetizer for a dinner party last week that we forget to set out. I saw them in the fridge and was already thawing meat for dinner when it hit me…
I mean really, who doesn’t love cheese stuffed meat (except vegetarians, vegans or people with lactose intolerances….) But these could be made with a black bean meatball mix just as easily

But if you do eat meat and cheese, these little bites are melt in your mouth amazing.
Here’s what you need:
1 lb Ground Beef or Turkey
½ C of Almond Flour
1 Egg
2 TBSP Plain Greek Yogurt
1Tbsp Water
1 tsp Garlic Powder
1tsp Onion Powder
½ tsp dried Oregano
Small mozzarella balls
And here is what you do:
Mix all the ingredients except mozzarella in a bowl with your hands or a fork, being careful not to over mix as this can make your meatballs tough.
Grab a bit of meat, smush it flat in your palm,
Place a small mozzarella ball in the middle
Roll the meat up and around the cheese making sure it’s totally surrounded.
Place the shaped meatballs in a cast iron skillet or a baking dish sprayed with cooking spray

Bake at 400 degrees for 15 minutes or until cooked through.

If desired put under the Broiler for 3-5 minutes to get a nice browned top.

Serve plain with some cauliflower rice,
Covered with some delicious homemade marinara sauce
Or atop a bed of spaghetti squash or zucchini noodles and sauce for a carb free version of a family favorite
