Balsamic Roasted Vegetables and Chicken

Vegetables! Vegetables! I love Vegetables! Sometimes when I walk through the produce section I just can't help myself- the bright colors and fun shapes are so enticing that I end up buying more than I intend to (or need for the weekly menu) and by the end of the week I am left with a few extra gorgeous veggies in the fridge that I don't want to waste. This recipe is one of my go-to's for clearing out the vegetable drawer of all those yummy finds.

This recipe is a great way to get tons of vegetables onto your plate in a delicious way. Your family or guests will have no clue how quick you put it together because the flavor tastes like hours of effort!


  • 1 1/2 lbs Boneless skinless chicken breasts cut into 1" cubes

  • 1/3 cup balsamic vinegar

  • 1/4 cup extra virgin olive oil

  • 4 cloves of garlic (minced)

  • 1 1/2 tbsp basil

  • 1 tsp thyme

  • 1 tsp kosher salt

  • 1/2 tsp pepper

  • 1 large zucchini

  • 2 medium carrots

  • 1-2 cups small mushrooms

  • 1 small red onion

  • 1 cup chopped sweet peppers

  • 1 cup grape tomatos


  • Mix the vinegar, oil, garlic and spices

  • Marinate the cut chicken in about 1/3 of the liquid and set aside

  • Preheat oven to 400 degrees

  • Line a large baking pan with foil or parchment paper

  • Chop up all your vegetables (set the tomatoes aside until the end)

  • Reserve 1/4 cup or so of remaining sauce

  • Toss the chopped vegetables (except tomatoes) with the sauce and stir to coat evenly

  • Spread the marinated chicken out evenly spaced onto your pan and then fill around the chicken with the marinated vegetables

  • Bake for 10-12 minutes

  • Pull out the pan, stir around the vegetables, add the tomatoes on top and then drizzle pan with the reserved 1/4 cup of sauce

  • Bake an addition 10 minutes or until chicken is fully cooked

Serve by itself, over brown rice or on a bed of vegetable noodles

How yummy does this plate of food look? Don't be fooled into thinking that if food is good for you it must be bland or flavorless.

Healthy food can taste amazing. Don't be afraid to play with this recipe.
