Protein Power Balls

Looking for a quick and easy snack or grab and go breakfast?

These protein packed power balls come together very easily and are so tasty you will definitely think you are treating yourself with every bite!

You can use a variety of ingredients to make these, so feel free to experiment once you get the basic method down. Just remember that if you add more dry ingredients you will need to increase the sticky stuff by either adding a bit more nut butter, honey or a teaspoon or 2 of water to help them hold together.

Here's how to whip up these tasty treats:

INGREDIENTS:

1 1/2 cup quick oats (you can use old fashioned but they will end up more dense)

1 cup natural peanut butter (or any nut butter will work)

1/4 cup raw honey

2 tsp vanilla extract

1/2 cup unsweetened coconut flakes (sometimes called desiccated)

2 TBSP chia seeds (optional)

2 TBSP wheat germ or flax seeds

a pinch of salt

DIRECTIONS:

Stir all ingredients together, it gets heavy but don't give up!

Pop the mixture in the refridgerator for 10-20 minutes to make it easier to work with.

Roll into balls approximately 1 inch in diameter and enjoy!

That's it- I told you it was easy.

These will keep at room temperature for about 3 days or in the refridgerator for up to a week but truthfully they never seem to last that long in my house.

With the combination of fiber, protein and healthy fats, these balls make great snacks, an easy breakfast when you are in a hurry, or wonderful additions to a packed lunch.
